
Chia seed bread is a tasty bread that can be made for breakfast, lunch, or to have as a snack over winter. The recipe uses chia seeds which are nutrient-rich seeds that are high in soluble fibre and contain omega 3 and 6.
INGREDIENTS
2 tbsp Natava Superfoods
Chia Seeds
4 tbsp Coconut Sugar
2 cups gluten-free flour mix
2 tbsp gluten-free baking
powder
¼ cup olive oil
2 eggs, beaten
¼ cup almond milk or milk
of choice
1 cup coconut oil
DIRECTIONS
Soak the chia seeds in a quarter cup of water for three to five minutes. Place all dry ingredients into a large bowl and combine.
Make a well in the centre and stir in the beaten eggs, milk and oil, stirring as you add each ingredient. Ensure the batter doesn’t go lumpy. Place to the side. In a separate bowl, mix the chia seeds and water together, then add to the batter and mix thoroughly.
Pour the batter into an oiled loaf tin and bake in an oven preheated to 180 degrees celsius. Bake for 30 to 35 minutes or until a skewer
comes out clean when inserted into the centre. Cool and serve with your favourite spread.
