Eating breakfast like a king - Day 11 & 12
You may have heard this saying before but it's going to be my "mantra" for changing the way on how I look at the breakfast/dinner situtation...

"Eat breakfast like a KING,
Lunch like a PRINCE and
Dinner like a PAUPER".


So growing up breakfast was just toast or cereal (rice bubbles and coco pops).

Lately it would be the weight watchers cereal bar (which don't get me wrong I still love these, as there handy on the go). But they may just not be "enough" breakfast. Maybe if I add a piece of fruit with some yoghurt it will be better.

The trouble I have with doing big breakfasts is that unless it's a weekend, I don't have time to whip up an omelete in the morning before work. I eat at work while perusing the emails that I received over night. and I love that extra 15-20 mins sleep in too much to give it away...

So what do I do? What do you do?

I've looked up online to see what other options I can do for hearty breakfast and some reasons why you should do it.

My Breakfast Ideas

Muffins

Muffins are great as to me they feel like a treat, you can put whatever you prefer with them and they are quick and easy to grab out the door (provided you baked them the night before, of course).

Blueberry, apple & cinnamon muffins

    2 cups of flour (wholemeal if you want a healthier option)
    1 tbsp baking powder
    1 tbsp light margarine
    150ml soy milk (or skim milk)
    1 egg
    1 large apple (finely diced)
    1 tbsp brown sugar
    1/4 tsp cinnamon
    3/4 cup blueberries (fresh or frozen)

1.    Preheat oven to 180 degrees (160 fan forced). Lightly grease a 12 hole muffin pan.
2.    Sift flour and baking powder into bowl. Mix together melted butter, milk and egg until well combined.
3.    Place chopped apple, brown sugar and cinnamon in with the flour mixture. Pour in the milk mixture and stir until just combined.
4.    Add the blueberries and carefully mix in.
5.    Place in preheated oven and cook for 10 - 12 minutes.
6.    Let stand for two minutes then take out of tin.
7.    Serve immediately with a flavored fruit yoghurt and extra berries if desired.

roughly 211 Calories

43.5g Carbohydrates



Yoghurt, berry & oat trifle

    50g strawberries (approx 4)
    100g yoghurt (low fat or reduced fat)
    25g oats
    25g sultanas or raisans

  1. Wash, hull and cut strawberries into quarters, set aside
  2. Using a clean wide lipped glass place ¼ of yogurt in glass  
  3. Sprinkle sultanas over the yogurt followed by oats, then strawberries, next ¼ of yogurt and repeat with sultanas, oats and finish with strawberries
  4.  Repeat in other glass
  5. Serve

One serving contains
Roughly 143 calories
4.45g Protein
24.85 Carbs
37.5g Sodium



Bircher Muesli

Bircher muesli is a traditional Swiss recipe which is very healthy and tasty.  It is the ultimate breakfast cereal that supplies many of the essential daily nutrients. You can add seeds and nuts for some crunch, just keep in mind this will increase the fat content.

    1 cup rolled whole oats
    1 cup premium apple juice
    1 pear grated with skin on
    1 cup 98% fat free natural yoghurt
    2 tablespoons sultanas
    2 tablespoons cranberries

    In a container or bowl place all ingredients, mix and refrigerate for a few hours or overnight.
    Serve with berries if desired.

Servings per package: 2

Serving size: 315g

One serving contains
Roughly 404 Calories
12.4g Protein
70.2g Carbohydrate
101mg Sodium



Now onto the reasons why I should eat a bigger breakfast.

1. It boosts your nutrient intake
As far as the early 1960s studies consistently show that breakfast eaters have better overall diets.

2. It improves memory and concentration
People who eat a balanced breakfast can concentrate better and are more efficient at their work than those who skip it.

3. It helps prevent binge eating
This properly it the biggest reason for me to eat breakfast. Eating breakfast starts up your metabolism. Breaking the fast you had from the 6-8 hour sleep you had.

Those are just three reason's why to eat a good breakfast.

Although I didn't practice what I preached this weekend in breakfast steaks, grocery day is sunday. I will start these techniques soon (I just have to finish off my supply of weight watchers bars. The Bircher Muesli sounds delicious!

I've never really been a big breakfast eater. I'm always a look forward to dinner type of person. If your the same as me (liking to finish your day with a big hearty dinner) We are going to find this a challenge!
