
These waffles are just perfect for your loved one this valentines, they are moist and filled with flavour. Jam is a perfect accompaniment for waffles, however jam in normally filled with both refined sugar and starch to add sweetness and texture. Making your own jam is an easy way to avoid these ingredients. Use coconut sugar to sweeten the jam and to add a creamy texture use chia seeds.
Protein waffles
Makes 1 large waffle
1/3 cup rolled oats1/2 scoop Balance vanilla protein powder 1 tbsp coconut flour1/2 tsp baking powder1 tbsp greek yogurt1/4 cup egg whites1/2 teaspoon of Red 8 stevia 1-2 tbsp water (it's best to start with less and and more as needed)
Raspberry & chia jam
Makes 1 jar/ 1 cup
300 g raspberries, frozen are just fine2-3 Tbsp Lifefoods coconut sugar1 tsp ground vanillaJuice from 1/2 lemon2 Tbsp water1 tsp Lifefoods chia seeds
Method
To make the jam, combine all ingredients for the jam in a pot. Bring to a boil, reduce to a simmer and cook for approximately 10 minutes. Blend or mash the berries. When cooled a bit add chia seeds and stir. Pour the jam into a jar and store in the fridge.
Preheat waffle iron, coat with nonstick spray. To make the waffles blend all dry ingredients.
Add in wet ingredients, blending well. Pour onto waffle iron and cook 6-8 minutes, or until golden grown and crunchy.
Serve the waffles with the jam and a dollop of creme fraiche, yoghurt or whipped cream.
