
Muffin Recipe: makes 6 large muffins
2 cups oven cooked pumpkin
1 block of feta (150g)
3 tbs sunflower seed kernals
2 tbs whole seed mustard
2 cups flour
3 tsp of baking powder
Handful of baby spinach (chopped)
2 eggs
1/3 cup milk
30g parmesan
Cut the pumpkin into small cubes and roast in the oven for about 15-25mins on 200ºC then wait to cool.In a large bowel combine the spinach, 3/4 of the feta (cut into cubes), sunflower seeds, parmesan, mustard and cool pumpkin cubes (leave a couple out for the topping).In another bowl, beat the eggs and combine milk.Then add the egg and milk mixture to the spinach & feta mixture.Sift the flour and baking powder and mix with a spoon (not too much though as you don't want to overmix).Then put into your muffin tray and top with left over feta, pumpkin and sprinkle some parmesan.Put in the oven and cook for 30mins.
So hopefully I won't gorge myself silly too much at bake-off tomorrow.
Here's what I ate today:
Breakfast: I had a weight watchers custard & apple cereal bar and a herbal feijoa tea
Morning tea: I had a pumpkin, spinach & feta muffin (this was the first trial before the "actual" bake-off, which I'm glad I did as the first batch didn't turn out very well). I'll put the recipe below.
Lunch-time: I had a salmon salad, so carrots, tomato, capsicum, red onion, lettuce and Sealord smoked salmon and ate an orange (not included in the salad).
Afternoon tea: Had a banana and a herbal feijoa tea.
Dinner: We had chicken tenders (that's chicken breast slices with Masterfoods moroccan spices) with a salad, like the one I had at lunch.
And the exercise I did: Legs workout
Ran 3k
10mins on the bike on "random"
2 sets of 20 squats on a step holding a 5kg weight
2 sets of 20 lunges on a step holding a 5kg weight
2 sets of 20 leg abductors (machine)
2 sets of 20 leg raises on machine
2 sets of 15 decline abs bench
2 sets of 20 leg press machine (30kgs)
2 sets of 20 inner leg pull machine (15kgs)
