Recipe: Cauliflower Crust Pizza

Gluten-free and refined sugar-free

INGREDIENTS

 Crust   Toppings

1 cauliflower head

½ cup shredded mozzarella

¼ cup grated parmesan

½ tsp dried oregano

½ tsp dried basil

½ tsp kosher salt

¼ tsp garlic powder

2 eggs
To make the crust dairy-free, omit the cheese and replace with 2 tbsp almond meal and 1 tsp olive oil.

 

These can be changed depending on your preference and available ingredients. 

We used:

50-100g pizza sauce (no added sugar)

¼ cup olives (sliced)

¼ cup capsicum (diced)

2 mushrooms (diced)

¼ cup ham or bacon (diced)

2 tbsp celery (diced)

¼ cup cheese (grated)

INSTRUCTIONS
STEP 1: Break cauliflower into florets, removing the stem, and pulse in a food processor until fine.
STEP 2: Steam on stovetop, drain well to remove as much water as possible.  
STEP 3: Once cauliflower is cool, combine in a bowl with all other crust ingredients.
STEP 4: Transfer mixture into centre of a baking tray and flatten. 
STEP 5: Bake for 20 minutes or until the pizza starts to turn golden brown.
STEP 6: Add toppings and bake for an additional 10 minutes.
