Revitalising chicken soup

The ingredients in this chicken soup recipe have each been selected to help support body against ills and chills. Garlic, turmeric and ginger are potent detoxifying and antiviral herbs to help the body get rid of toxins, stimulate circulation, reduce inflammation, aid digestion and boost your immune system. Coriander also has antibacterial and anti-inflammatory properties that can help fight disease. Adding a little protein such as chicken will supply your body with essential amino acids your body needs to heal and nourish.

Ingredients

2 litres chicken stock

2 cups chicken, cooked and shredded

1½ cups celery, finely chopped

1½ cups carrots, finely chopped

2 brown onions, diced

2 tbsp coconut oil

2-5 cloves garlic, minced

2 tsp dried ginger

2 tsp dried turmeric

2 tsp dried thyme

2 tsp dried rosemary

1 cup parsley, chopped

1 cup spinach, chopped

½ cup (loosely packed) fresh coriander, finely chopped

Generous seasoning of sea salt.

Method

STEP 1: In a cooking pot on a medium heat, heat the coconut oil, and then add the celery, carrots and onions. Let it simmer for 3 to 5 minutes or until the vegetables soften.

STEP 2: Add the chicken stock and chicken meat. Bring to a gentle simmer and cook for 5 to 10 minutes or until vegetables soften further.

STEP 3: Add garlic, herbs and spices, and simmer for another 1 to 2 minutes. Season generously with sea salt. Remove the pot from the heat and stir through the coriander, spinach and parsley. Serve and enjoy.
