Salted caramel cookie dough bites

These little bites of amazingness by Nicky from Lunchbox Inc are sugar, dairy and grain free, and don't require a food processor!

Time to make: 10 minutes | Makes: 12-15 balls

Ingredients

¹⁄³ cup Nuzest Clean Lean Protein – Smooth Vanilla 
1 cup almond meal 
1 tsp vanilla powder 
¼ tsp sea salt 
¼ cup cacao nibs (or 50g dark chocolate) 
¹⁄³ cup melted cacao butter 
¹⁄³ cup almond butter (or smooth peanut butter) 
2 tbsp rice malt syrup

Method

In a bowl, mix all dry ingredients together (protein powder, almond meal, vanilla, salt and cacao nibs).

Melt cacao butter on the stove in a pot, or in the microwave. 

Add nut butter to the cacao butter, and then pour over dry ingredients.

Mix with a spoon or your hands until completely combined. 

Roll into balls and place in the fridge for an hour (or overnight) for the perfect bite!
