
Ingredients
1-2 cups grated zucchini
1 cup onion, diced
1 clove garlic, minced (optional)
½ cup capsicum, diced (optional)
½ cup ham or cooked bacon, diced (optional)
3 eggs, lightly whisked
1 cup grated cheese
1½ cup milk
½ cup self-raising flour
1T olive oil
½ tsp salt
¼ tsp ground black pepper
Instructions
STEP 1: Preheat oven to 375 degrees and grease a 20cm baking dish or a muffin tray.
STEP 2: Place all ingredients in a bowl and mix together until just blended. Add as many vegetables or tasty extras as you'd like!
STEP 3: Pour into baking dish or muffin tray and bake for 30-40 minutes until top is lightly browned and a toothpick comes out clean.
STEP 4: Allow to cool for at least 10 minutes, and enjoy!
