Santa hat protein muffins

These cute muffins are a fun and simple holiday treat!

 Ingredients

·        1 cup kumara

·        3 tbsp honey

·        2 tbsp coconut oil, hardened, or butter, softened

·        3 eggs

·        1½ cups almond meal or flour

·        ½ cup chocolate-flavoured protein powder

·        2 tsp baking powder

·        2 heaped tbsp cacao powder

·        ½ tsp salt

·        3 tbsp water (or as needed)

·        Cashew cream, mascarpone or cream to top

·        Strawberries to top.

 

Method

Depending on your oven, set it to 160 to 180 degrees Celsius. Chop the kumara into chunks and put in the kitchen whizz. Blend for about a minute until it makes small crumbs, or grate it. Add the eggs, honey and coconut oil, and blend until well combined. Add the remaining ingredients, and mix until just combined. Put about two spoonfuls of mixture into each muffin tin. Bake for about 20 minutes until crisp and they spring up when touched. When cool, top with cashew cream, mascarpone or cream, and strawberries.
